always a hit

Every Christmas, I make these yummy cookies and think of my friends Justin and Katrina, who gave me the recipe years ago. These delights are made with just a few ingredients, including saltines. They are surprisingly tasty and every year I get requests for the recipe. Here is all you need:

Well, and sugar, which I forgot to include in the photo. A food blog this will never be!

Here's the recipe:

Preheat oven to 400 degrees.
Place 35 saltines on a foil lined cookie sheet.


Melt 1 stick of butter then add 1/2 cup of sugar. Mix well.
Spread this mixture over the saltines.
Bake 3-5 minutes until bubbly and golden. 
Remove from oven and spread 1 package chocolate chips over bubbly crackers.
Place back in oven for 1-2 minutes so chocolate can melt, then spread chocolate evenly over crackers.


Sprinkle coconut, nuts or whatever on top. (I've tried lots of different chocolate and toppings combos and by far the biggest crowd pleaser is dark chocolate with coconut.) I think Ghirardelli makes the best chips ever, BTW. Maybe I'm biased because they gave me so many free samples when I lived in San Fran.


Lick chocolaty spatula.


Let pan cool, then place in fridge for about 1/2 hour.
When chocolate is hard, peel foil off bottom, break into pieces and put in tin.
Keep refrigerated and enjoy!!


Finnian is convinced Santa will like these. I am too.
